I am thinking of using 2 steel angles welded back to back, eight feet long. Weld an eye in the middle point connect to a winch/hoist. Chain at both end of the angle tired to a cantilever wood platform to hoist up load on the platform, gross weight about 1000 lbs. My question is what size of steel angle I need?

Quick look shows that a double 6" X 4" angle long legs back to back might work. Good starting point for analysis.
Moment equals 8 Kip feet. S= 5.6 in^3 Some lateral support should be necessary.
2000lbs is quite a heavy load. i think an angle won't do. you might need two I-beams. one I beam chained on top the other by an eyelet at the center. and then chains the end of the I-beam to hosit and then the wood platform in a cross manner.
you might want to try the smallest S-beam which is S5x10 @8 feet each without needing to do the calculations.......you might talk to the steel supplier for a smaller available S-beam.....
